If you want dramatic scenery, the drive down to Sagres takes you past cliffs that drop straight into the Atlantic. Heading inland toward Évora gets you into medieval towns with Roman ruins scattered around. Up north past Coimbra the terrain shifts completely and you hit wine regions that don't see many tourists compared to the Douro area everyone talks about.
